Icelandic Lamb was the Main Ingredient of the Chef of the Year 2019 Competition

The Chef of the Year 2019 finalists described Icelandic Lamb as having a highly uniform quality, tenderness and a particularly pure flavour.

 

Mikko’s main dish presented Old-School style on a platter: roast lamb loin and drippings gravy seasoned with lamb fat.
